April 12 – Named after the very first chef oenologist of the House, this 100% Chardonnay Grands Crus champagne takes you on a journey to the heart of the exceptional terroir of the Côte des Blancs and invites you to discover the ancestral know-how of the House.
Main grape variety of the prestigious Côte des Blancs, the Chardonnay of the 2008 vintage benefited from a slow maturation, allowing freshness and a beautiful aromatic concentration. For Louis Salmon 2008, the grapes come from the best plots of Grands Crus: Cramant and Chouilly for finesse, Avize for strength of character and Mesnil-sur-Oger for structure and longevity. Chalk, the keystone of this renowned terroir, gives the wine a unique typicity and an astonishing mineral purity. Partially matured in oak barrels, Louis Salmon 2008 expresses great complexity and reflects specific winemaking know-how through the inimitable signature of the House’s vintage champagnes.
Louis Salmon 2008 has an elegant maturity, expressed by complex notes of yellow fruits and citrus fruits. Characterized by a creamy palate with refreshing balance and incredible length, it is a wine of great finesse worthy of the most beautiful pairings: cassolette of sweetbreads from Corrèze or creamy risotto with shellfish.

ABOUT BILLECART-SALMON CHAMPAGNE
Billecart-Salmon is above all the fruit of a union. A union between Nicolas François Billecart and Elisabeth Salmon who, in 1818 and just married, founded their own Champagne House in Mareuil-sur-Aÿ, a village near Epernay. Alongside them was Louis Salmon, Elisabeth’s brother, a passionate oenologist. Today, Mathieu Roland-Billecart, the 7th generation of family, run the house. Two centuries have passed since the creation of Billecart-Salmon champagnes, but its motto remains unchanged: “Privilege quality, aim for excellence”.
