Il Matto turns to Australian products for a new menu
IL MATTO continues to claim itself as the best authentic Italian experience on the Surf Coast and will focus on sourcing and sustaining local with its new menu design.
Led by chef Samuele Buzzo and owner Salvatore Formica, Il Matto focuses on Australian produce for its new offering, while staying true to its Italian roots.
Il Matto will launch a new Italian-inspired gnocchi bar, reboot the pizza bar, and dive into new food options such as swordfish and duck stew.
“We are really excited about the new menu, which will continue to provide diners with the authentic Italian experience,” said Il Matto owner Salvatore Formica.
“The new menu will include many items that are one, Australian made, but also affordable for the incredible quality of the dish.
“With prices rising across all industries, we want to keep our business and dining experience affordable for everyone.
“The new meal options including our duck stew, pistachio and pesto stuffed swordfish, bottarga and gnocchi are all top notch, but will all be at a price everyone can enjoy.”
Il Matto’s new menu will see over 85% of produce sourced from Australia, with a focus on defending and restarting industries across the country.
“We source our salami from Queensland, source our seafood from South Australia and get our cheeses primarily from New South Wales,” Mr Formica said.
“Our menu will change seasonally, with new and fresh items that are popular at the time coming onto the menu every three to four months.”
“We want to use seasonal produce to create jobs and business for everyone in Australia; it’s a chain effort that we want to be part of, and we think it’s important to support each other in these difficult times.
Il Matto also aims to target its vegan and gluten-free offer, stressing that 98% of the products will be available for people with dietary needs.
The new beer and wine list will also suit all tastes, with Italian and Australian beers on hand for all occasions.
As they approach their fifth anniversary, the Il Matto team is extremely touched by the support and generosity of the community, especially during the pandemic.
“Fortunately, our business continues to go up and up,” Formica said.
“It’s a true testament to the local community who keep coming for our authentic Italian experience.
“The Surf Coast Shire have also been big supporters of our business, offering to block car parks to put tables so that we adhere to restrictions, while suspending and refunding our bills during this period.
“Without these local people and groups, we are nothing and they have kept us going.”
Formica said the hard-working staff led by Buzzo, Executive Chef Adnan Jameel and Rocco Potenza had been key to the company’s survival, with the trio continuing to attract more customers to the site with their culinary prowess.
